This recipe is incredibly easy to make and uses seasonal fruit. It does not contain any refined sugar so the ice lollies are refreshing, low in calories and you don’t have to stop at one.   • 1/2 cup rooibos tea (made using 2 tea bags)
  • 1 cup raspberries
  • 100 g coconut milk
  • 1.5 tablespoons honey

Directions:

Using 2 rooibos tea bags fill 1/2 cup with boiling water. Leave to stand until the tea has cooled, then remove the tea bags. Puree all the ingredients, pour into ice lolly molds and freeze for 3-4 hours.

This is an easy peasy recipe that can be used over pancakes (Trader Joes Multigrain Pancake mix), as cake fillings, in pies, as ice-cream toppings, on yogurts and parfaits – I made this with an intention to use in a tart recipe, but the yield with a 12 ounce box was not much we ended up using it over pancakes – trust me when I say it was terrific!
